The latest in our line of Cold IPAs, Adult Swim features Idaho 7 and Galaxy hops and a heaping helping of Riverbend’s Cumberland Corn (20% of the grain bill!
Cold IPAs are usually brewed with a lager yeast fermented much closer to ale yeast temperatures and this one is no exception. This results in a beer that has all the big hop notes you would expect in an IPA with the crisp, clean finish of a lager.
Idaho 7 is known for its red grapefruit notes with a hint of black tea. Galaxy hops are a citrus bomb and come across in this beer as pithy orange peel.
Most of our previous Cold IPAs (Uncle Ricky’s, Cool Durham, La Borracha etc) have used a large amount of rice as an adjunct to make the beer light-bodied, crisp and clean.(this is one of the reasons macro-brewers like Budweiser use rice). In Adult Swim, I decided to change things up and used malted NC corn from Riverbend instead to achieve the same thing. You may notice it in the flavor profile since it is a significant portion of the grain bill
